A Taste of Portugal: Caldo Verde

 

Caldo Verde is a traditional soup from Portugal that can be eaten anytime but is especially great for those cold winter days when you want something warm and comforting. Caldo Verde has been passed down through generations as a hearty staple of Portuguese cuisine.

A simple recipe to make with only 4 main ingredients. It’s made with potatoes, kale, onions, Chorizo, and garlic, which give it a unique and flavorful taste. Caldo Verde is a great starter to your meal or had as your main meal, a nutritious soup, packed with vitamins and minerals from the kale and potatoes.

Originating in the Minho region of Northern Portugal, caldo verde has become an iconic Portuguese dish that can be found in restaurants all over the country. It is typically served with slices of chorizo or other sausages, adding a smoky flavor to the soup.

Calde Verde Soup

Caldo Verde

The name caldo Verde translates to “green broth” in Portuguese, referencing its signature ingredient — kale. Since the soup is easy to make and requires minimal ingredients, it's a great option for busy days when you need something quick and easy to make.

Ingredients
  

  • 500 g medium potatoes peeled and chopped
  • 1 medium Onion chopped
  • 3 cloves garlic chopped
  • 200 g Kale or collard greens, washed, dried, and thinly sliced (stem removed)
  • 1.5 L Water
  • 1 Chorizo sliced
  • 100 ml Olive Oil
  • Pinch Salt and Pepper to taste
  • Optional Chicken or vegetable stock, bacon, or other types of sausage.

Instructions
 

  • In a large pot, combine chopped potatoes, garlic, onion, half the olive oil, salt, and 1.5 L of water over medium heat.
  • Boil for about 20 minutes, or until potatoes are cooked.
  • Blend the potato mix until a smooth soup-like consistency
  • Add the finely chopped Kale, chorizo, and remaining olive oil, to the potato mix
    Prepping Caldo Verde
  • Bring everything back to a boil, reduce heat, and simmer for 10 minutes. Season with pepper if needed.
  • Serve Caldo Verde with some freshly baked bread. Enjoy!

Notes

Tips for making Caldo Verde
When making Caldo Verde, use good quality potatoes and kale as these are the main ingredients in this soup. Be sure to also use good-quality olive oil
To make Caldo Verde even more flavorful, you can add vegetable or chicken stock to the water.
The most important thing when making Caldo Verde is to cut your kale very thin, like grass.
If you don't have Chorizo, you can use bacon or other types of sausages. Or you can simply leave out the Chorizo altogether. Enjoy!
How to store your Calde Verde Soup
Caldo Verde can be stored in an airtight container in the refrigerator for up to five days. It is best to consume Caldo Verde within this time frame as freshness and flavor will gradually decrease with each passing day. To reheat Caldo Verde, simply simmer it over low heat for a few minutes until warmed through, or simply put it in the microwave until heated.
Caldo Verde can also be frozen for up to three months. To freeze Caldo Verde, first, let it cool completely before transferring it to an airtight container or freezer bag and placing it in the freezer. Defrost Caldo Verde overnight in the refrigerator before reheating as mentioned above. Enjoy!

The traditional Portuguese Coffee Pudim flan is a delicious and super easy dessert to make but better enjoyed cold. The best thing about many Portuguese desserts is that they are all very simple to make with minimal steps.

Coffee Pudim - Portuguese coffee pudding (flan)

A Simple recipe to make and absolutely delicious. A dessert for any occasion.
Prep Time 10 minutes
Cook Time 1 hour 20 minutes
Total Time 1 hour 30 minutes

Ingredients
  

  • 8 Eggs
  • 2 Cans Condensed Milk
  • 200 ml Cream
  • 300 ml Milk (warm)
  • 4 Tbsp Coffee
  • 50 ml Whisky

TO MAKE CARAMEL

  • 2 Cups Sugar
  • 1 Cup Water

Instructions
 

  • Preheat oven to 190° degrees
  • Prepare the Caramel, Place sugar and water in a pot over medium heat, stir until it becomes caramelized.
  • Pour Caramel into a cake tin with a hole in the middle, Caution: use gloves or tea towel as the pan will become hot, move cake tin in a circular motion to have the caramel on the bottom and the sides of the tin, continue this for 2-3 minutes until you see caramel start to thicken.

preparing the Pudim

  • Prepare the coffee in warm milk and mix
  • In a blender, place eggs, condensed milk, cream, whisky, and prepared coffee/milk, blend until mixed together.
  • Pour mixture in cake tin over the caramel
  • Place cake tin in an oven-proof dish, pour boiled water around the tin (bain-marie). You can put foil over the cake tin or if your cake tin has a lid.
  • Bake for 1 hr, 20 min, let cool slightly. Turn it over onto a serving plate/platter.

Notes

TIP: You can choose to make the Caramel with only Sugar, no water if you please, or simply buy the Caramel from the store.
This Pudim can be made to your flavor, if you don’t like coffee, you can substitute the coffee for Orange, Chocolate, Vanilla, coconut, etc.
This recipe is to make a taller pudding, you can half the recipe for the pudding not to be as big.
You can also half the sugar/water for caramel, depending on how much caramel you like. I like to have extra caramel.

A traditional Portuguese sweet, easy and quick to make, served as a Christmas dessert, but great all year round, cut into cubes, it makes a nice snack too.

Ingredients
  

  • 1 Packet Angel Hair Pasta
  • 2 ½ Cups Sugar
  • 2 Cups Milk
  • 3 Egg Yolks
  • 1 Cinnamon stick
  • 1 Piece Lemon rind
  • 1 Tbsp Butter
  • 1 tsp Salt
  • Ground Cinnamon (to decorate)

Instructions
 

  • In a saucepan put milk, sugar, butter, lemon rind, and cinnamon stick, mix with a wooden spoon, and bring it to a boil.
  • Remove the lemon rind and cinnamon stick and then add the angel hair pasta to the milk mixture, cook on low until milk mixture is mostly evaporated (you don’t want it too runny) and pasta is cooked, stirring occasionally for pasta not to stick to the pot.
  • Beat the egg yolks in a dish, while over low heat, add beaten egg yolks to the mixture and mix quickly to avoid clumps of egg yolk forming.  Mix until evenly combined throughout the pasta.
  • Remove from heat and pour onto a plate/ serving dish or into small bowls. Let it cool for about 5 minutes and decorate with ground cinnamon.

Notes

You can be creative and do a design of shapes or writing. Get creative.
Cut into squares and it can be eaten warm or cold.

This indulgent treat, also known as Portuguese-style French bread, holds a special place in my kitchen, inspired by my husband’s roots and our shared love for recreating time-honored family recipes. Rabanadas are not only a testament to the rich culinary tapestry of Portugal but are also a celebration of the simple joys that come together at the table.

Rabanadas – Portuguese style French bread

A delicious s quick and easy snack or as a dessert for any time of the year.

Ingredients
  

  • 1 French Bread Stick (day or 2 old to be drier)
  • 4 Cups Milk
  • ½ Cup Sugar
  • 1-2 Cinnamon sticks
  • half Lemon Peel
  • 4 Eggs (Beaten)

Cinnamon Sugar Mix

  • 1 Cup Sugar
  • 2-3 Tbsp Cinnamon

Instructions
 

  • In a medium pot, over medium heat, Bring to Boil milk, cinnamon, sugar, and lemon peel and then simmer for 1-2 minutes until the sugar has dissolved. Remove from heat and let cool slightly and remove cinnamon sticks.
  • Beat eggs together in a medium bowl until well combined.
  • Dip bread slices one at a time, into milk mixture, and then into the eggs, turning to coat the whole slice of bread.
  • Heat oil in a large pan over medium heat, ensuring enough oil to come ½ up the edge of the pan, Fry soaked bread on each side approx 2 minutes on each side, until golden.
  • Place on paper towel to remove excess oil, coat both sides of the cooked Rabanadas in cinnamon sugar immediately.

To make the Cinnamon Sugar

  • Mix the cinnamon and sugar together, coast over both sides of the cooked Rabanadas.
  • Enjoy Hot or cold.

Notes

Tip: Slice breadstick the day before to dry out a little bit, making it slightly stale.
Cut breadstick into slices about 3cm thick, you can switch the milk and use water or port wine or wine.
For extra sweetness, you can drizzle some honey on top and serve.

Bolo De Bolacha - Biscuit Cake

Coffee Biscuit cake is easy to make, no-bake cake, and barely any rest time that you can enjoy soon after being made.
Made with Maria biscuits dipped in coffee and cream.
Made with a twist to the original recipe.

Ingredients
  

  • 2 packets Maria Biscuits (depending on the size of dessert)
  • 600 ml Thickened Cream
  • 4 Eggs - Separated into whites and yolks
  • ¼ cup Sugar - 4 Tbsp for egg whites, 2 Tbsp for cream
  • 1 ¼ cup coffee with water (made to your taste) pour into a bowl
  • Crushed maria biscuits to decorate

Soft Eggs

  • 4 Egg Yolks
  • 7 Tbsp Water
  • 6 Tbsp Sugar

Instructions
 

  • In a small bowl make coffee and allow to cool slightly (coffee Made to individual taste)
  • Whip egg whites with adding x4 spoons of sugar in a bowl and mix until stiff peak forms.
  • Whip cream in a bowl with x2 sugar to sweeten, beat until stiff (whipped cream)
  • Combine whipped egg whites and cream together
  • To assemble: Smear a little of the cream mixture on the base of the dish or serving platter you are going to use.
    Dip biscuits in coffee and place them on the layer of cream in the dish you are using.
  • Spread a cream layer over the biscuits and another layer of biscuits.
  • Repeat steps 4 & 5, (layer coffee dipped biscuits, then cream, biscuits, cream, so on) you can break biscuits to fill the spaces if you like.
  • Saving some of the cream mixture, finish the biscuit layer with cream on top, before adding the “soft egg” on top and then finishing off with the cream mixture on the very top.

To Make Soft Eggs

  • In a small pot, add the 7x spoons of water and 6x spoons of sugar, bring to a boil over medium heat, let cool
  • Add eggs yolks and mix well, bring to the boil again continually mixing. The mixture will start to thicken, if you think it is too thick, you can add a little extra water. Let it cool.
  • Add the “soft egg” mixture to the top of the whipped cream layer, spread evenly. Finish with the remaining cream mixture.
  • Refrigerate for 1 hour and Place crushed biscuits to decorate when ready to serve dessert.

Notes

You can make the dessert by making it on a platter/ plate or in a dish, depending on the look you would like to serve it. 
You can add as much or as little sugar as you like.

Broken Glass Jello

Sweet, Soft, and creamy gelatin dessert, Quick and Easy to make with little ingredients.

Ingredients
  

Colored Jelly

  • 3 or 4 Boxes Colored gelatin (jelly) (red, green, blue, yellow)
  • 1 Cup Boiling water
  • Cup Coldwater

Creamy Jelly

  • 3 Packets Colorless unflavored gelatin 
  • ½ Cup Coldwater
  • 1 Cup Boiling water
  • 1 Can Condensed milk
  • 1 ¼ cups Whipping cream

Instructions
 

  • Make colored jelly with 1 cup boiling water and 1/3 cup cold water to each flavor jelly you use.
    Refrigerate the jelly overnight or until set.
  • Once the jello is set, cut it into chunks and set it aside.
  • In a bowl, put the 3 packets of unflavored/ clear gelatin, Pour in ½ cup of cold water and wait about 2 minutes.
  • Add in the 1 cup of boiling water and stir constantly until gelatin is dissolved
  • Add the 1 can condense milk and cream.
  • Lightly grease tin/mold you will use. (this will help it come out easy)
    Place the colored jelly chunks into the mold/tin.
    Pour the milk mixture into mold/tin over the sliced colored jelly.
    Refrigerate until set.

Notes

An easy-to-make dessert to take to any party with little mess. 
  • Decide how many flavors of colored jelly (gelatin) you want to use, you can use 3-4 flavors: I like to use- strawberry, orange, lime, and berry. You can use more, depends on how many colors you want through the dessert.
  • You can add 1/2 cup of pineapple juice if you like to add flavor. 
  • To get the dessert out of the mold, Dip the mold into warm water for a few seconds or wrap a warm cloth around the mold. 
  • Flip the mold onto a serving plate and eat cold.
